Solo site-seeing in LA

Next year, my first trip will be a solo vacation in Los Angeles. On day 1, I’ll be exploring the neighborhood I’m staying in and attending a concert in the evening. On day 2, I plan to start my morning at The Original Farmer’s Market and visit The Grove. After lunch, next up will be the gorgeous Los Angeles County Museum of Art.

Day 3 starts with another museum, this time The Getty, then the Hammer Museum. I’m not an art buff but I do love visiting cool museums! Afterwards I’ll be making a trip to Koreatown for some delicious Korean cuisine. Lastly, day 4 is an exciting one—I’m headed off to Universal Studios! As a Nintendo fan, I’m absolutely looking forward to visiting Super Nintendo World there.

Thailand has been at the top of my travel bucket list for ages, and I’m hoping 2025 is the year I finally make it happen. From the stunning temples and bustling street markets to the serene beaches and lush jungles, there’s something so magical about the mix of culture and natural beauty. I’d love to explore the vibrant streets of Bangkok, try authentic Thai dishes, and maybe even learn to cook some myself!
What really draws me to Thailand, though, is its diversity. One day you can be trekking through the green hills of Chiang Mai, and the next, lounging on a white sand beach in Koh Samui. Whether following the well-loved Banana Pancake Trail or carving out my own adventure, the warmth of the people, the fascinating history, and the awe-inspiring landscapes make Thailand a dream destination for me.

Savouring the flavours of Portugal and Spain

In the coming year, I’d love to embark on an exciting culinary journey to Portugal and Spain. These two countries are a paradise for food lovers, each offering a unique blend of flavors that tell the story of their history, regions, and traditions.
From the fresh seafood and comforting stews of Portugal to the tantalizing tapas and world-famous paella of Spain, there a few reasons not to travel here! In Portugal, I look forward to indulging in pastéis de nata and tasting the delicate wines from the Douro Valley. While I’m in Spain, I can’t wait to indulge in everything from Jamón Ibérico to the bold flavors of Catalan cuisine. Beyond the food, both countries are brimming with culture, from the music of Lisbon to the flamenco rhythms of Seville, making this trip a perfect blend of culinary delight and cultural discovery.

Adventuring in Central & South America

I just came back from a trip to Costa Rica and Colombia, and I can’t wait to explore more of Central and South America. I’ve researched all the Latin countries I could visit; Guatemala and Ecuador are now ranking high on my list. In Ecuador, I’d love to stay at an ecolodge in the Mindo Cloud Forest and visit the towns of Baños and Cuenca. In Guatemala, I’d stay in a hotel overlooking Lake Atitlán and the nearby volcanoes. I also want to explore Antigua; it’s supposed to be a vibrant city.
I may not be able to make it happen next year but that’s OK, it gives me time to improve my Spanish!

Experiencing the medieval charm of Latvia

Having family living around the world makes it an affordable way to travel. Thankfully, Latvia, a gem of the Baltic region, promises a unique blend of natural beauty, rich history, and vibrant culture that makes it an ideal travel destination, and a great opportunity to visit family. So, in 2025, I have even more compelling reasons to explore its wonders.
The capital city, Riga, balances its medieval charm with vibrant contemporary life. The city boasts one of the most extensive collections of this architectural style in the world. The Old Town, a UNESCO World Heritage site, is renowned for its Art Nouveau architecture, cobblestone streets, and historic charm.

Another reason to visit Latvia is their evolving food scene, with innovative chefs blending traditional Latvian flavors and modern culinary techniques. I may even indulge in Michelin-starred establishments while in Riga. I love Eastern European cuisine and I’m looking forward to discovering their traditional dishes like grey peas with bacon, smoked fish, and Rupjmaize (rye bread).

Admiring Ireland’s charm in the countryside

Ireland has always been at the top of my travel bucket list, and as a redhead, I can’t help but feel more drawn to the place with the highest per capita percentage of redheads in the world. I would love to stand on the Cliffs of Moher, one of the country’s most iconic landmarks, and take in the stunning view of the ocean below. Exploring the countryside greenery and visiting famous castles such as the Blarney Castle to kiss the legendary Blarney stone is a must.

In Dublin, I’d love to tour Trinity College and see the famous Book of Kells and wander through the National Museum of Ireland. Alternatively, I would also make time to stroll through the smaller villages like Galway to shop local crafts, experience warm welcoming pubs, and enjoy a hearty meal such as shepherd’s pie. Ireland is full of must-see spots, and I can’t wait to check it off my list!
